Sicilian-born, award-winning chef Lino Sauro opened Olio Kensington Street in early 2017 to show Sydney why Sicilian is the new Italian. Olio Kensington Street (Italian for olive oil) is located in the beautifully restored The Old Rum Store with a contemporary indoor dining room plus lush rooftop terrace overlooking Chippendale.

Sauro comes from a long lineage of self-sufficient Sicilian farmers where he grew up with meals that were created with the quality produce grown on the property. This translates into Sauro’s menu with dishes that reflect a strong connection to his Sicilian roots

Keeping it in the family, Sauro sources his olive oil – the base of all his dishes – from the family’s Sicilian farm. Typical of the region, seasonal seafood, wild fennel, raisins, saffron and couscous are hero ingredients on Olio Kensington Street’s menu.

The Tasmanian Pasta and Sauce Company was born from my Sicilian heritage and raised in Tasmania. I worked in Rome, Sydney and the east coast of Australia, I moved to Tasmania in 1999 and opened a restaurant on Bruny Island, called Rao’s on Bruny. After several years on Bruny I purchased an import Italian food business with my mate, called Serra Rao Fine foods.

From this we made our retail outlet and restaurant called the Italian Pantry. After bringing many new and amazing “firsts” to Tasmanian like Prosciutto di Parma, Buffalo Mozzarella and many others.

We then had great success with our dinners at the Italian Pantry receiving an award from the Italian government, Ospitalita’ Italiana for the most authentic Italian food provider in the Asia/Oceania and top 5 finalists in the world.

Clara and Stefano, whilst extremely proud to call Melbourne home, the pair feel a strong sense of nostalgia and have tried very hard to fill some of the void of the ‘little things’ that we just aren’t privy to in our cosmopolitan city. Acknowledging the outstanding efforts of Melbourne’s hospitality industry, they felt many of the ingredients were accessible but imagined them being stitched together in a different way. They describe this project as being ‘purpose driven’. “We would find ourselves sprinting around on a weekend for a stand-up espresso in Carlton, to an Italian deli in Brunswick, back home to roll some orecchiette, and then out for an aperitivo with friends. It was exhausting!” says Stefano. “So we tried to list the few things we stand-for that we just can’t live without, and over a glass of primitivo wondered whether they could exist under one roof. By the end of the bottle ‘iPugliesi’ was born”.

For us, 48 hours is the minimum time required for the dough to rise. A dough that has been leavened for 48h with natural yeast will make your pizza light, fragrant and aromatic…just like in Italy.

Natural yeast has been used for generations in Italy. In fact, back in the day, only one person in the village would have natural yeast and they would use it to barter goods with.

Bread was made once a week, and in some villages, just once a month, so natural yeast had to be bartered or families would go without their bread….a sacrilegious thought to any food-respecting Italian!

It was late 2016 when Lorenzo Tron and Roberto Davoli opened their humble pizzeria, Shop225, in Pascoe Vale South.
